Venison Stew

2 Tbs Vegetable Oil
2 lbs venison, cubed
2 Tbs liquid smoke
Season to taste
Water
Add three vegetables of
choice

Directions:

Add vegetable oil to soup pot.
Season venison and add to pot.
Sear meat.
Cover with water and bring to a
boil.
Reduce heat and let simmer for 45
minutes.
Add vegetables of choice.
Continue to cook until vegetables
are done.

Chicken Salad

3 cups cooked chicken,
diced
2 cups golden apples, diced
1 cup red grapes, split
1/2 cup pecans, chopped
1/4 cup celery, chopped
2 cups mayonnaise

Directions:

Prepare ingredients.
Mix together.
Refrigerate before serving.

Grilled Quail with
Pomegranate
Glaze

2 cups honey
1/2 cup pomegranate juice
1/4 cup white grape juice
2 TSP orange zest
1 TSP lemon zest
4 green onions finely  
chopped

Directions:

In a non-reactive bowl, combine
all ingredients.
Brush glaze over grilled quail 5
minutes before the quail is done.
Top with chopped green onions
and serve.
Yields enough for 1 dozen quail.
Grill quail until done just like
chicken.

Cole Slaw

16 oz. Dole Slaw Mix
1 Tbs. Red Wine Vinegar
1 Tbs sugar
3 cups Mayonnaise
1/4 cup Blueberries
Salt & Pepper to taste  

Directions:

In a large bowl, mix all items
together.
Refrigerate before serving.

Tuna Salad

3 cups Tuna, drained and
flaked
1 cup swiss cheese, cubed
1/4 cup celery, chopped
3 Tbs relish
1/2 cup pecans, chopped
1 1/2 cups mayonnaise
1/4 cup red onion, chopped  
1 cup grapes, split
2 Tsp lemon juice
1/4 cup mustard
Salt & Pepper to taste

Directions:

In a large bowl, mix all items
together.
Refrigerate until served.
Serve salad portion on a whole
lettuce leaf.

Fire Burger

1 Hamburger Bun
6 oz. Ground beef patty
1 Tbs chunky salsa
1 slice cheddar cheese
1 Tbs Jalapeno Peppers,
sliced
1 Tbs Black Olives, sliced  
1 Tbs Guacamole Dip

Directions:

Cook ground beef patty until
done.
Place cheese slice on cooked beef
patty.
Toast Hamburger Bun.
On bun heal add salsa.
On bun top spread Guacamole.
Add Jalapeno Peppers and Black
Olives to Burger.

All the way!

Add ketchup, mustard, pickles,
onion, tomato, lettuce,
mayonnaise, salt & pepper to
taste.
